David Papillon is French, winemaker and sommelier. Papillon means butterfly – that’s why we chose such a logo. They make wine in the ways learned in France.
David first studied sommeliery. He worked in France and Switzerland as a sommelier, where he came into contact with winemakers and wanted to learn more about their work. Then he went to Australia, where he worked in large wineries.
He now owns a small winery located in central Slovakia in the village of Devičie (Krupina District of the Banská Bystrica Region). In 2018, David and his partner converted the old magical stone house into a winery, started producing wine and at the same time preparing the land for the ecological planting of vineyards. Since 2019 they have been as an organic winery.
As with all their wines, fermentation is spontaneous, the wine is uncleared, unfiltered, bottled by gravity. Made in Slovakia from Slovak organic grapes, with love, respect for grapes and without the use of added substances. 12 months in oak barrels (mix of new and used barrels).
Aromas of ripe forest fruits, cranberry, pomegranate with hints of raspberry and earth, along with a fuller feeling body backed up with clear with freshness!
Give it a go with kapustnica – a traditional Slovakian dish made from smoked pork and cabbage, szegedin goulash or cigánska pečienka – Slovak burger! Pork burger marinated with milk and garlic in a crispy bun served with French fries and pickles!
