Papillon are a small winery situated in central Slovakia in a little village – Devičie. They became enchanted by not only the village, its location and history intertwined with winemaking, but also by nice people and over a hundred of wine cellars dug into a volcanic rock that can be found here. In 2018, they turned a charming old stone house into a winery, started to produce their own wine and begun to prepare their own land for ecofriendly planting of vines/vineyard. Since 2019, they are a certified BIO (organic) winery.
White narutal dry wine, no additives. Full, rich flavor with fresh acidity at the end. Made in Slovakia, from bio quality Slovak grapes.
Year of planting: 2010. Whole bunches of grapes pressed. Maturing: 12 months in oak barrels (mix of new used barrels) and 2 months in a fiberglass tank.
Give it a whirl with Bryndzové halušky (Bryndza sheep cheese dumplings), cabbage soup or Treska – this is a traditional salad created in 1945 and it is made of cod, vegetables such as carrots and onions, a generous amount of mayonnaise and some vinegar, mustard, and seasonings… go try!
