The dedication of the Trefethen family is manifest in every aspect of their operation, from the soil to the table, including sustainable farming, thoughtful winemaking, and gracious hospitality.
“A wine of depth and dignity, this elegant expression of Napa Valley Cabernet Sauvignon reflects everything we have learned farming our estate vineyards in the cool climate of the Oak Knoll District since 1968. Achieving a density of dark fruit on the palate, we maintain a bright and lively peppery spiciness, resulting in a wine of impeccable balance that evolves beautifully in both the glass and the cellar.”
84% Cabernet Sauvignon 10% Petit Verdot 3% Merlot 2% Malbec 1% Cabernet Franc from the Main Each vineyard Oak knoll District. Aged in 52% new oak for 18 months.
Rich, deep red garnet color with aromas and flavors of black currant, ripe plum, and blackberry. Notes of lavender, cocoa, and leather are layered with black pepper and vanilla bean. Full-bodied and intense, this wine is balanced and well-structured with seamless acidity and firm tannins. This powerful wine is approachable and enjoyable now and will continue to evolve and show its personality over the next decade.
Winery Chef Chris Kennedy loves to pair this wine with black pepper or thyme to bring out the layered notes of this Cabernet Sauvignon. These spices soften the tannins allowing the fruit notes of the wine to be more noticeable and enjoyable. He suggests pairing it with Ahi Tuna au Poivre (spice combination of toasted coriander and fennel seeds along with crushed pepper) or why not try black pepper veggie bangers, creamy mash and loaded veg!
